Home Kitchen - Hainanese Chicken Rice

This dish is relatively easy to cook but to do it really well may be another matter altogether.

I think that I may have it figured out but my "solution" calls for cooking an entire chicken instead of parts. Thus, I would need some mouths to feed and stomachs to fill. Do I see any volunteers? Hah hah!

Cutting is up neatly and nicely (just like the pro uncles) would require much more practice, not to mention deboning.

In the meantime...

Home Kitchen - Oyster Mee Suah

Commonly known by its dialect name, O-Arh Mee Suah
(蚝仔面线), I made up my mind to try my hand at this dish made famous by all the Taiwanese food TV programmes after tasting some from a local franchise that tasted flat, sour and powdery.


I had to improvise for the stock but the result is a satisfyingly appetizing sustenance!

I came across a live seafood market selling these lovely coloured abalones. It is too great a temptation to pass up and even though I have not cooked them before, I promptly bought some and pondered hard over how I shall prepare them.

I decided to try my hand making this delectable soup base from 5 different types of mushrooms into which I will add mee suah, a favoured noodle on Chinese birthday celebrations. The result is a clear and light, yet tasty, healthy and nutrious bowl of noodles that befits the name that I gave it -- 养生面线。
